Preheat oven to 375 degrees. Spray a 9x13 baking dish with cooking spray.
Cut sausage into disks, then cut disks in half. Spray a medium skillet with cooking spray and cook sausage over medium high heat until browned on the outside, about 3-5 minutes.
Meanwhile, pierce sweet potatoes with a fork a few times. Cook sweet potatoes in microwave for 5-6 minutes, or until tender. (Or you could peel and cube the sweet potatoes into bite sized pieces and cook in the same skillet used to cook sausage, over medium high heat, until soft, about 15 minutes.) Let sweet potatoes cool for a few minutes and remove peel. Cut potatoes into bite size cubes.
Combine the sausage and sweet potatoes into the bottom of the baking dish.
In a bowl, whisk together eggs, egg whites, almond milk, salt, and pepper. Pour evenly over sausage and veggie mixture. Sprinkle cheese evenly over the top.
Bake for 40-45 minutes, or until eggs are cooked through. Serve warm! (Note: This dish can easily be made ahead of time! Simply prepare the day before and bake the morning of, or bake a few days ahead of time and re-heat the morning of!)
