To make the pie crust: Preheat oven to 375 degrees. In a medium bowl, combine the dry ingredients. In a small bowl, combine the wet ingredients. Combine the wet and dry ingredients, and stir, (or use your hands) to incorporate the wet and dry ingredients. Spray a 8 inch pie dish with cooking spray, and press pie evenly into pie dish using hands to distribute evenly. Bake for 10-15 minutes, or until golden brown. Remove from the oven and set aside, (leave oven on).
To make the pie filling: Put everything into a blender and blend until filling is smooth, (or whisk for 2-3 minutes, or until everything is well combined).
