Line a small baking pan with parchment paper or foil lightly sprayed with cooking spray.
Thaw and drain the spinach very well and set it off to the side. In a medium bowl, bowl, add the cream cheese, parmesan, feta, and seasonings. Stir to combine. Add the spinach, and stir until thick mixture forms.
Roughly form mixture into 1 small ball, and one large ball on baking pan. Freeze for 30-60 minutes, or until firm enough to roll into balls with your hands. Take out of the freezer and roll into 2 round balls, then coat each ball in shredded cheese and place back onto baking pan. Freeze for an additional 30 minutes so the balls can firm up.
Once you remove the balls from the freezer, stack the smaller cheese ball on top of the larger one. Place on a pie plate (or serving dish of choice), and make into a snowman using whatever creative ingredients you can think of (or what I recommended!) Keep chilled in fridge until ready to serve. Enjoy!
