Spray a large nonstick skillet with cooking spray. Over medium heat, cook the egg whites in the pan until almost cooked through. Add the spinach and feta cheese in the last minute of cooking, along with salt and pepper to taste. Turn off heat.
Warm tortillas in the microwave for 30 seconds, and divide egg mixture between the two wraps. If desired, place the wraps back into the pan and toast the outside of the wrap over medium low heat for about 1 minute on each side, or until toasted. (Or you could toast it up in a panini grill!) Enjoy!
