Spray a large nonstick skillet with cooking spray. Over medium heat, cook the egg whites in the pan until almost cooked through. Add the spinach and feta cheese in the last minute of cooking, along with salt and pepper to taste. Turn off heat.
Warm tortillas in the microwave for 30 seconds, and divide egg mixture between the two wraps. If desired, place the wraps back into the pan and toast the outside of the wrap over medium low heat for about 1 minute on each side, or until toasted. (Or you could toast it up in a panini grill!) Enjoy!

 You could also use shredded cheese of choice instead.
 I used mission low carb tortillas, because that is what I had on hand. They are 120 calories per tortilla. You could also use La Tortilla brand, or any low carb/high fiber/whole grain tortillas. If gluten sensitive, use gluten free tortillas or corn tortillas!
