Preheat oven to 350 degrees and spray a baking sheet with cooking spray or line it with parchment paper or a non-stick baking mat. Set aside.
In a small saucepan over medium-low heat, add almond butter and honey, stirring until the almond butter is melted and fully combined with the honey. Stir in extracts.
Remove from heat and add oats, protein powder, salt, sweetener, and baking soda. Mix well and use a spatula to ensure that all of the oats are well coated. Stir in egg white.
Bake granola for 10 minutes, take it out and let sit for about 5 minutes. Break it all up and stir it again. Spread it out in a single layer again and bake an additional 7 minutes or until the desired color is achieved.
