Grate apple and sweet potato, and squeeze excess moisture out with a paper towel or napkin before and measuring each out. Place grated sweet potato and apples in a bowl and microwave for two minutes.
Combine sweet potatoes and apples with the seasonings, and stir. Add egg whites and parmesan (if making savory version) and stir until thoroughly combined.
Spray non-stick skillet with cooking spray and warm over medium heat. Measure out 1/4 cup batter with a measuring cup, and drop onto heated skillet. Smooth out batter and shape into a pancake with spatula. Gently flip fritters when one side is lightly golden brown, and gently press down with spatula. Remove from pan and enjoy with low fat sour cream or Greek yogurt sweetened with stevia, cinnamon, or low sugar maple syrup if desired.
