Zucchini Chips

Here's the Dish

I personally LOVE zucchini and could eat it in just about any form or fashion.  However, I know there are many people that have their minds made up that they hate vegetables and they absolutely refuse to try them.  I know this, because ‘that person’ was my father, until I made him these zucchini chips! The coating on these zucchini chips adds the perfect amount of  golden brown ‘crunch’ on the outside, while the zucchini remain nicely roasted on the inside! These zucchini chips are the perfect snack if you’re craving something salty, and they taste great by themselves or with a side of ketchup or marinara sauce!


The estimated total time to make this recipe is 20 Minutes.


Preheat oven to 450 degrees. Line baking sheet with parchment paper (or foil will work, but parchment paper works best), and spray with non-stick cooking spray.


Wash zucchini and slice into 1/4 inch slices.


Mix the bread crumbs, Parmesan and seasoning in one bowl.  Place the egg whites in another bowl.


Dip zucchini slices in the egg whites, followed by the breadcrumb mixture, coating them evenly.


Spread zucchini out on in a single layer on the baking sheet. Roast 7 minutes. Turn zucchini over. Roast another 7-8 minutes, or until coating is crispy and golden brown. Serve immediately.


2 Large zucchini, sliced into 1/4 inch disks
1/4 cupDry breadcrumbs1
1/4 cup Grated fresh parmesan cheese (or grated asiago cheese)
2 Egg whites
1/4 tspSeasoned salt
1/4 tspGarlic powder
1/8 tspFreshly ground black pepper
OptionalSeasonings: 1/4 teaspoon of any of the following: dried onion powder, oregano, Mrs.Dash seasoning, Cajun seasoning, Stevia, parsley, or basil

1 I like Panko, but you could make your own ‘fiber one’ breadcrumbs or use whatever type of bread crumbs you like

Absolutely awesome!!! I made a batch in the oven and also tried them on the grill on a vegetable pan made especially for the grill. The chips on the grill were done much faster than the oven chips and the topping burned a little but they were still delicious. Definitely will make these again.

These are soooo good. I have made them several times now. I used the cooling rack in the cookie sheet idea someone else posted. The first time I did it they browned nicely but stuck to the rack. The next time I did it I sprayed the rack with non-stick olive oil spray. That worked great. No more sticking or turning. I made these just tonight but I didn’t have Parmesan so I used Fontinella.
